On Thursday evening, R2 Elizabeth Epstein led residents from the integrative medicine pathway through a virtual cooking class to make black bean burgers! Delicious and nutritious!!!
The recipe (below) comes from Elizabeth’s own cookbook A Beautiful HEART.
SAN DIEGO BLACK BEAN BURGER STACKS
Serves 4
These favorite black bean burgers, which bear San Diego’s namesake and cultural flavor influences, are easy to make and perfect for grilling or cooking in a pan. These can be enjoyed on a whole wheat burger bun, but they are especially delicious served over lettuce with all kinds of delicious toppings stacked on top, eaten with a knife and fork.
1 15-oz can black beans, drained & rinsed 1⁄4 cup old-fashioned rolled oats
1⁄4 cup whole wheat flour
3/4 tsp cumin
1⁄2 tsp cayenne pepper
1⁄2 tsp garlic powder
1⁄2 tsp salt
1⁄4 cup chunky salsa
Add black beans to a medium bowl and partially mash with a fork. Add the rest of the ingredients and mix thoroughly.
Using your hands, form 4 medium-sized patties.
Heat a skillet or frying pan (nonstick or sprayed with nonstick spray) over medium heat. Add patties and cook for about 5 minutes per side.
To serve, add greens to a plate. Squeeze a little lemon or lime on top. Add black bean burger and spread a little mayo on top. Layer on sliced tomato, sliced avocado, a drizzle of cilantro crema, a dollop of salsa, and a sprinkle of shredded cheddar.
Serving size (137g = 1 large patty)
